In early 2009, following the company’s expansion, John Burton-Race, Michelin-starred chef joined Kent Inns of distinction in a development role.His brief initially was to help assemble a kitchen and front of house team at Harveys capable of delivering the quality synonomous with his own name. He did just that and continues to combine his commitments at The New Angel in Dartmouth with monthly training visits to Harveys and the company’s other restaurants.

“John’s passion for truly delicious food is why we recruited him” explained Sherry Martin. “His enthusiasm and hands-on approach makes him such a valuable new member of our team and makes it possible for us to continue improving all the time”.

Well in advance of opening Harveys, John hand-picked three chef’s to undergo, six weeks training with him at The New Angel in Dartmouth. The result is a “dynamic, focused young team to be proud of” says Sherry.
John Cobb, head chef and his team arrive just before the fishermen deliver at 7am every morning and so begins the 5 hours of mise-en-place ahead of lunchtime. The day’s menu is planned and in total concentration the team prepare the sauces, stocks, vegetables, meat and fish for the days service. Just before lunchtime, our own-recipe artisan breads are pulled from the oven and the fresh pasta rolled out ready to serve.

The restaurant opens its doors every lunchtime from midday until 3pm and in the evening from 6pm until 10pm. On Saturday’s and Sunday’s the restaurant remains open throughout the whole afternoon, ideal for families. In addition to the seafood bar menu, a choice of two daily-changing restaurant menu’s are offered; the A La Carte Menu and the Grazing Menu.
John Burton Race is a top chef and highly successful restaurateur with a larger-than-life personality. His career as a chef progressed rapidly, and following a stint at Les Manoir aux Quat’Saisons he became head chef of Le Petit Blanc. He opened his own restaurant L’Ortolan in 1986 and then moved to John Burton Race at the Landmark Hotel in 2000 and was awarded two Michelin stars at both restaurants. |

John became a television star, firstly in French Leave, which charted the progress of John and his family over a year in rural France and then in Return of the Chef when the family came back to England and settled in Dartmouth where John opened The New Angel which was awarded a Michelin star and the AA Restaurant of the Year award in its first year.
